Herb Roasted Chicken
- Fresh Oregano; 2 cups
- Fresh Rosemary: one sprig
- Celery; 2 stalks
- Garlic: 4 cloves
- Salt & Pepper
- Avocado Oil; 2 Tbls.
Place chicken into a Dutch Oven or Roaster.
Stuff Thawed Chicken with Celery, Garlic and Oregano.
Garnish top of chicken with Rosemary, salt & pepper. Drizzle oil over top of chicken.
Place chicken in 300* oven and bake for about 4 hours. Remove cover for last 20 minutes to crisp top of chicken. Check internal temperature with instant read thermometer. Target 165* at thickest portion.
