Tomatoes tend to come in droves. What do you do with all those extras after you have canned everything you want for the season? Make this really easy Pizza Sauce. It also is great to use on your pasta dishes.
Pizza is one of those all time favorite foods and so easy to make from scratch. Make this home made pizza sauce the next time you serve pizza and the gang will never ask for “take out” pizza again. Plus it is so easy to make and store ahead.
Cover a large baking sheet with parchment paper. Slice up your favorite heirloom tomatoes; I love the violet jasper we grew in our market garden this year. Fill the baking sheet with tomatoes, laying them close together. Garnish with, thyme, oregano, basil and minced fresh garlic. I like a bit of a kick to my sauce so I sprinkle in some dry red pepper flakes. Salt and pepper, then drizzle avocado oil over the entire area.
Place in oven at 300* and bake until soft and juices begin to evaporate. In my oven that is about 1 hour. Remove from oven, let cool. Scrape the tomato mixture off tray and place in freezer bags. I flatten mine out into sheets for easy storing in the freezer. You can store some in glass jars in your refrigerator to use within a few days.
Smear this paste onto your pizza dough and add your favorite toppings. Enjoy!
